Inspired by generations of family cooking, beginning with meals prepared by Umberto Fedeli’s mother and later his sister, our dining experience has evolved into a defining element of how we connect with those we serve. We believe some of the most meaningful relationships are built while breaking bread together, sharing stories, and creating a sense of belonging. Welcome Chef Nicola Bacchi!
Chef Nicola Bacchi is an internationally recognized Italian chef and culinary leader with more than 35 years of experience spanning Europe, North America, Asia, the Middle East, and Africa. Born in Mantova, Italy, he graduated from Milan’s prestigious Carlo Porta Culinary Institute and Amerigo Vespucci Hospitality Institute before earning a Bachelor’s Degree in Food Science and Gastronomy.
Throughout his distinguished career, Chef Bacchi has led culinary operations ranging from Michelin-starred kitchens to luxury hotels, restaurant groups, and international consulting projects. Most recently, he served as Corporate Chef and Culinary Operations Manager for a 20-unit restaurant group, overseeing menu development, recipe standardization, chef training, and operational excellence across French, Mediterranean, Italian, Asian, and Latin American concepts.
His executive leadership and consulting experience includes Luogo Restaurant in Nashville, Lè Fresca in Birmingham, La Dolce Vita in Nairobi, and Hyatt’s Joie de Vivre Hotel Zhaolong in Beijing. He also served as Personal Chef to international soccer star Ezequiel Lavezzi and consulted for Guangzhou Evergrande Football Club under legendary coach Marcello Lippi.
Chef Bacchi has successfully led numerous high-profile restaurant openings, including multiple locations for the acclaimed BiCE Restaurant Group in the United States and Qatar. During his tenure with BiCE, he managed large-scale catering operations, including events associated with the Tribeca Film Festival.
His culinary foundation was shaped through work with some of the industry’s most respected chefs and restaurants, including Bottega Restaurant under James Beard Award-winning chef Frank Stitt, as well as Michelin-starred chefs Claudio Sadler and Massimo Ferrari in Italy. This blend of classical Italian training and global culinary leadership has made Chef Bacchi a respected figure in international hospitality.
Today, Chef Bacchi continues to bring his passion for authentic Italian cuisine, culinary innovation, and operational excellence to every project, combining decades of global experience with a commitment to creating memorable dining experiences.
